Kids' Party Rice Cones

 
Given that I am really passionate about kids eating and enjoying healthy food, it is not surprising that I love the idea of kids' party food being visually exciting and fun - without being pure artificial junk! So, I'm now on a little mission to keep an eye out for easy, healthy, tasty ideas that could be fun additions to a kids' party food table. 

These party rice cones came about as I was thinking of how to present left over vegie rice (again!!) to our 2 year old, in a slightly more fun way. The rice itself was really simple to make - one of our regular family dishes, cooked with brown rice, with finely diced garlic, onion, dried Italian herbs, tomatoes, carrot, zucchini, eggplant & roasted peppers - and once the cold mix was spooned into the mini ice-cream cones, they were topped with a few olive slices (- olives being a favourite of our little one).

... and the verdict? After a very loud, very positive: "Oh, wow, mama!!!" when he saw the plate, B actually devoured the 4 mini-cones I'd prepared for lunch, one after the other, including chomping away at the base end of the cone halfway through each cone (why do kids love doing that?!)


Other cold rice fillings which could work well also - chicken & corn rice; mild rice curry; and tuna, cheese and tomato rice, ... I can easily imagine this working as a low stress dish, as the rice can be made a day in advance, and just scooped out into the little cones at the last minute.
